Instructions

Mince ground pork, fresh ginger and scallions in a food processor; shape into a 4x12-inch rectangle, then cut into 12 patties and season with salt and black pepper.

Heat 1 Tbsp. oil in a cast-iron skillet over medium-high. Fry half the patties until cooked through, 34 minutes per side; repeat with remaining 1 Tbsp. oil and patties.

Meanwhile, for the Hawaiian Pico de Gallo, combine the pineapple, bell pepper, and scallion greens.

Transfer sliders to a platter, top with Swiss cheese slices and cover with foil. Sear Spam in same skillet over medium heat, 1 minute per side. Spread barbecue sauce onto cut sides of rolls; layer each with lettuce, pork patty, Spam, and pico.
