Chicken Souvlaki with Greek Salad

The idea of food being “better on a stick” is true worldwide! See for yourself with this Greek-inspired skewers.

Chicken skewers are better than ever in this Greek specialty. Traditional souvlaki [soo-VLAH-kee] are skewers of lamb, but chicken has a bit more backyard cookout appeal around here and it’s just as good a match for the marinade of lemon juice, oil, and herbs.

Serve the souvlaki over a fresh, colorful Greek salad featuring classic ingredients like tomatoes, kalamata olives, and feta cheese. Then round out the meal with Cheese Flatbread, which you can eat on the side or even use to wrap up the chicken.

That’s not all! Whip up the Greek yogurt-based Tzatziki Sauce for dipping the chicken and bread. It may seem like a lot of little things to prepare, but it’s all weeknight easy and delicious together.

We prefer metal skewers over bamboo ones because they can be reused endlessly, never ignite, clean easily, and come in a variety of styles and price points.

Raw zucchini brings a nice crispness to the salad. But if you’d prefer, you can place the unsliced zucchini halves on the grill while the chicken is cooking.

Instructions

For the chicken, combine lemon juice, olive oil, 1 Tbsp. vinegar, 1 tsp. oregano, basil, thyme, rosemary, and garlic. Toss chicken with marinade; season with salt and pepper. Cover chicken and refrigerate 1 hour, tossing after 30 minutes.

Preheat grill to medium-high. Brush grill grate with oil.

Thread chicken onto four skewers. Grill skewers, covered, turning once, until chicken is cooked through, 58 minutes.

For the salad, combine tomatoes, onion, olives, zucchini, feta, and parsley. Whisk together extravirgin olive oil, 2 Tbsp. vinegar, and 2 tsp. oregano; pour over salad and toss to coat. Season salad with salt and pepper.

Serve skewers over salad with Tzatziki Sauce for dipping.

Give the chicken tons of flavor by marinating bite-sized pieces in an herb mixture for at least an hour.
