Making this recipe on a night you aren’t firing up the grill? Simply broil the pitas on a baking sheet lined with foil for about 5 minutes.
Preheat grill to medium. Brush grill grate with oil.
Grill pitas until grill marks appear, 1–2 minutes, then flip. Divide cheese and oregano between pitas; season with salt and pepper. Grill pitas until cheese melts, about 1 minute more. Cut each pita into four wedges before serving.
