How To Prepare Artichokes
To prepare an artichoke for a dish, first cut off the stem. You can also break off the stem, which pulls out any unwanted fibers. Remove the outer petals until you reach the yellow-green core. Next, cut off the top third of the artichoke. (There’s no need to remove the sharp points.) If preparing with the Rosemary-Garlic Leg of Lamb, just slice the remainder in half. If using in another dish, scrape out the fuzzy choke with a melon baller and discard.
