How to Fix Seized Chocolate

Have you ever overheated your chocolate, causing it turn into a grainy lump? This is called seizing and there's a way to save it! Use this quick tip to make your seized chocolate smooth again.

If the chocolate you are melting turns grainy or lumpy (called “seizing”), remove the pan from the heat and stir in ½ to 1 t. shortening or cooking oil (margarine or butter won’t work). Continue to add fat and stir until the mixture becomes smooth again.

To prevent seizing, make sure your pan is completely dry before melting chocolate.
