Mashed Potatoes & Celery Root
Mashed Potatoes & Celery Root takes classic mashed potatoes to a whole new level of deliciousness. Celery root adds earthy celery flavor to mashed potatoes, while maintaining their classic creaminess.
Cook celery root in a large pot of boiling salted water, partially covered, 10 minutes. Add potatoes and cook until potatoes are fork-tender, 15 minutes more.
Drain celery root and potatoes and return to pot; cook over medium heat, stirring to remove excess moisture, 1–2 minutes. Reduce heat to low.
Stir in butter until melted. Add milk and white pepper, and blend with a hand mixer on low speed until smooth; season mash with salt. Keep mash warm until ready to serve; top with celery leaves.
Since celery root is more fibrous, give it a head start on cooking before adding the potatoes.
