Preheat oven to 325°. Coat a 3-qt. baking dish with nonstick spray. Cook bacon in a large skillet until crisp; transfer to a paper-towel-lined plate and drain all but 2 Tbsp. drippings. Add butter to drippings and melt over medium heat.

Sweat apples, onions, and celery in skillet until softened, 1215 minutes. Add wine and reduce 5 minutes.

Combine onion mixture with bread, bacon, broth, pecans, parsley, sage, eggs, zest, salt, and pepper; transfer to prepared dish. Bake dressing until bread is crisp around the edges, 4045 minutes.

To easily stale bread for dressing, transfer bread cubes to a low-heated oven and bake until dry.

Add wine to sautéed apples and vegetables for deeper flavor and additional moisture.
