Grilled Zucchini Hummus
With just 5 ingredients, this Zucchini Hummus is bound to surprise you. Grilling the zucchini adds a charred, smoky flavor to the veggie-packed dip while the rest of the ingredients are pretty standard. This Zucchini Hummus is the perfect summer appetizer or snack!
You can serve any zucchini left from making the hummus as dippers.
Preheat grill to medium-high. Brush grill grate with oil.
Grill zucchini, covered, until tender and grill marks appear, about 3 minutes per side; cool slightly, then coarsely chop.
Purée zucchini, chickpeas, lemon juice, tahini, and garlic; season with salt and pepper.
