Demi baguettes are shorter, single-serving loaves. If you can’t find them, just cut a longer baguette into two 6-inch lengths.

For the apricot spread, combine jam, shallots, and Dijon; season with salt and pepper.

For the sandwiches, divide ham between bottom baguettes, coat with spread, then add watercress, Brie slices, and top baguettes

For the best flavor, select a slightly ripe (soft to the touch) Brie and thinly slice with the rind.
