Ham & Brie Sandwich
Jazz up a basic ham and cheese sandwich by piling thin slices of smoked ham and creamy Brie onto a demi baguette, then tie it together with a sweet-tangy apricot spread.
FOR THE APRICOT SPREAD, COMBINE:

Demi baguettes are shorter, single-serving loaves. If you can’t find them, just cut a longer baguette into two 6-inch lengths.
For the apricot spread, combine jam, shallots, and Dijon; season with salt and pepper.
For the sandwiches, divide ham between bottom baguettes, coat with spread, then add watercress, Brie slices, and top baguettes
For the best flavor, select a slightly ripe (soft to the touch) Brie and thinly slice with the rind.
Watercress stems are tender enough to eat, just remove any tough ends and yellowed leaves when rinsing.
