Beet Carpaccio Salad
Beets are a concentrated source of many nutrients, including bone-building phosphorus and energy-producing iron, as well as fiber, folate, potassium, and magnesium. Beets may also help lower bad cholesterol.
FOR THE VINAIGRETTE, WHISK:
FOR THE SALAD, ARRANGE:
When sliced so thinly, the earthy flavor of beets is muted so they can perfectly accentuate the peppery greens.
For the vinaigrette, whisk together lemon juice, oil, vinegar, and honey; season with salt and pepper.
For the salad, arrange beets, watercress, orange segments, pistachios, goat cheese, dill, onion, Parmesan, and capers on a platter or divide evenly among serving plates. Drizzle vinaigrette over salad.
