Perfect for a steak with little marbling, like tenderloin or triangle steak, compound butter adds flavor and a little sauce as it melts.

Instructions

Cook bacon in a skillet until crisp. Transfer bacon to a paper-towel-lined plate and reserve 1 Tbsp. drippings. Once cool, finely chop bacon.

Combine butter, reserved drippings, blue cheese, shallots, parsley, walnuts, zest, and Worcestershire; season with salt and pepper.

Mound butter mixture onto a piece of plastic wrap. Roll plastic wrap around butter to form a tight cylinder, then tightly twist ends of plastic wrap. Freeze butter until firm, 30 minutes.
