Preheat grill to medium-high. Brush grill grate with oil.
Heat 1 Tbsp. oil in a sauté pan over medium-high; add mushrooms and sauté until they begin to brown, 3–4 minutes. Stir in garlic and cook 1 minute; season with salt and pepper. Remove pan from heat; cool mushrooms.
Combine ground sirloin with 1 Tbsp. oil, soy sauce, ½ tsp. salt, ½ tsp. pepper, and mushroom mixture in a bowl. Divide and shape sirloin mixture into four patties.
Grill burgers, covered, until a thermometer inserted into centers registers 160°, 3–4 minutes per side; transfer to a plate, tent with foil, and let rest 5 minutes.
Reduce grill heat to medium-low.
Brush toast with remaining 1 Tbsp. oil. Grill toast until lightly browned, 1–2 minutes per side.
Top toast with burgers, Creamed Spinach Sauce, and Parmesan.
Sauté mushrooms, stirring often, until they release their moisture and begin to brown.
Mix burger ingredients until ground sirloin, seasonings, and mushrooms are evenly distributed.
For open-faced sandwiches, grill thick slices of toast until crispy and lightly browned on both sides.
