Oven-steaming is the perfect method for cooking salmon. By combining the advantages of both baking (gentle heat) and steaming (moisture), overcooking becomes nearly impossible. And the result? Oven-Steamed Salmon is juicy and moist with no added carbs or calories.

To keep the sauce warm before serving, hold it in a water bath—transfer the sauce to a bowl, then nest it in a larger bowl of hot water. Cover with plastic and stir often.

Instructions

Fill a pan with 1 inch of hot water. Place the pan in the oven before adding the water to avoid sloshing it on the floor. Preheat oven to 325°. Spray cooling rack with nonstick spray.

Remove pin bones from fillets; season fillets with salt and pepper. Place prepared fillets, skin-side down, on the rack, ½-inch apart. Place prepared rack on top of the water-filled pan in the oven.
