Preheat oven to 425°.

Place cauliflower crusts on baking sheets.

Heat a skillet over medium-high. Add butter, garlic, onion, spinach, ½ tsp. salt, and pepper to skillet; cook until vegetables soften slightly, about 2 minutes. Spread vegetable mixture over crusts.

Top vegetable mixture with tomato, Parmesan, and mozzarella. Finish each pizza with frozen chicken and sprinkle with remaining ¼ tsp salt.

Bake pizzas until cheese is melted and crust is crispy, 1315 minutes; serve warm.
