Preheat oven to 450° with a baking stone on bottom rack.

Cook pancetta in a sauté pan until crisp; transfer to a paper-towel-lined plate and reserve drippings.

Sauté onion in drippings over medium heat.

Add 3–4 Tbsp. water at a time, as needed, to keep onion from scorching. Sauté onion until golden brown, about 15 minutes total.

To build pizzas, transfer two dough rounds to pizza peel dusted with cornmeal. Divide and gently spread goat cheese among dough rounds. Carefully lift dough off peel to make sure it easily releases. Divide rosemary, onion, pancetta, and Asiago and arrange among dough rounds.

Bake pizzas, two at a time, until crust is nicely browned, about 10 minutes, then top with parsley
