Sumac-Roasted Chickpeas

With its redish-purple hue, ground sumac [SOO-mak] is a spice made from the berries of a wild bush that’s native to the Middle East and Italy. It gives food a tangy, fruity flavor reminiscent of lemon. Incorporate sumac, a key ingredient of fattoush, as seasoning for the crunchy Roasted Chickpeas.

Since the chickpeas roast for a while, get them in the oven before preparing the salad and grilling the kebabs.

Instructions

Preheat oven to 400°.

Dry chickpeas with paper towels to absorb moisture. Remove and discard skins from the chickpeas.

Toss chickpeas with oil and sumac; season with salt and pepper. Transfer chickpeas to a baking sheet and bake until crispy, 40 minutes.
