The figs can be tossed in the spice
mixture, wrapped in bacon, and
refrigerated until ready to bake.
Instructions
Preheat oven to 425°.
Heat a 12-inch cast-iron skillet over medium heat. Working in batches,
cook bacon until slices start to curl and brown slightly, 2 to 3 minutes per side. (Do not cook until crisp.) Remove bacon, and let drain on paper towels, reserving drippings
in skillet.
Stir together coriander, cumin, salt, cinnamon, and red pepper in a small bowl.
Add figs and oil in a large bowl; toss to coat. Sprinkle spice mixture onto figs, tossing to coat. Wrap 1 slice bacon around each fig, securing ends with wooden picks. Place in skillet.
Bake until bacon is browned and crisp on edges, about 15 minutes. Remove wooden picks, and serve immediately.
