Roasted Garlic and Bacon Dip
Tired of ranch? This roasted garlic and bacon dip is sure to be a favorite at your next gathering. The roasted garlic creates a milder and sweeter flavor than raw garlic alone, while the bacon adds smokey depth.
Make the dip the day before your party, this recipe makes plenty. Make some crispy potato skins to really wow the crowd.
Preheat oven to 400°.
Slice off root ends of garlic bulbs; season with salt and pepper, drizzle with oil, and wrap in foil.
Roast the garlic 45 minutes. Remove garlic and set aside.
Cook bacon in a skillet over medium heat until crisp, 10 minutes. Transfer to a paper-towel-lined plate and discard drippings.
Combine sour cream, mayonnaise, 1/2 cup scallions, cilantro, chipotle, adobo sauce, lime juice, and Worcestershire in a bowl. Squeeze cloves from roasted garlic; dice cloves and stir into dip along with bacon. Season with salt and pepper.
