Mediterranean Lamb Kebabs

No one will be able to hurry past these kebabs — inspired by Mediterranean street food — without stopping for a snack. On busy streets in practically any Mediterranean city, you’re bound to see people snacking on grilled skewers. Vendors in tiny stalls crank out countless kebabs made with just about anything that can be speared on a stick and seared over coals.

Satisfy your appetite and maybe even a little bit of your wanderlust with these kebabs of lamb, red bell pepper, and onion — all enhanced with a very-Mediterranean marinade of red wine, lemon juice, and fresh herbs. After assembling and grilling the kebabs, enjoy them straight off the skewers with Tzatziki Sauce for dipping. You may want to have pitas or flatbread available, too, for your friends and family’s snacking pleasure.

Instructions

Combine minced onion, wine, lemon juice, olive oil, oregano, rosemary, and cumin for the marinade; season with salt and black pepper.

Add lamb to marinade. Cover and marinate in the refrigerator at least 4 hours or overnight.

Preheat grill to medium-high. Brush grill grate with oil.

Thread lamb, bell pepper, and red onion onto skewers. Grill kebabs, covered, brushing with marinade every 2 minutes, until cooked to desired doneness, 78 minutes for medium. Serve kebabs with Tzatziki Sauce.
