If you’re using wooden skewers, make sure to soak them in water for at least 30 minutes before using.

Instructions

Preheat grill to 375°. Brush grill grate with oil.

Combine lemongrass paste, minced garlic, shallots, five-spice powder, cornstarch, honey, soy sauce, vinegar, and chili garlic sauce. Stir in pork until combined.

Divide pork mixture into 8 equal balls then adhere to 8 skewers, elongating pork as you press around the skewer. Transfer pork skewers to a plate, cover, and chill until pork firms up, 15 minutes.

Grill pork skewers until a thermometer inserted into pork but not touching skewer registers 160°, about 4 minutes per side.

Combine water, sugar, lime juice, fish sauce, and sliced garlic for the sauce; stir until sugar dissolves.

Drizzle pork skewers with 1 tsp. sauce; serve remaining sauce on the side.
