Craving a salty, crunchy chip? Stay out of the snack aisle and bake up these Kale Chips with Parmesan instead. Not a fan of kale? Have no fear, your whole family will be begging for more kale before you know it, they're that good and that addictive.
Kale, the leafy green of the cabbage family, is available year-round, but is at its peak from mid-winter through early spring. Kale’s list of health benefits is long, most notably for being an excellent source of antioxidant vitamins.
Preheat oven to 300°. Line two baking sheets with parchment paper.
Cut kale leaves from center ribs; discard any thick stems.
Toss kale with oil, Parmesan, pepper, and salt; arrange in a single layer on prepared baking sheets.
Bake kale until some leaves are crisp (remaining leaves should crisp as they cool) and Parmesan is browned 25–30 minutes. Let chips cool until crisp, at least 5 minutes.
