Save yourself a little time by lining your baking sheet with parchment; the parchment catches the syrup drips, leaving only the clean rack. And don’t toss that extra syrup; it’s great in cocktails or to sweeten tea.

Instructions

Simmer honey, water, sugar, orange juice, cardamom, cinnamon stick, and salt in a saucepan over medium heat until syrup reaches 235°.

Off heat, stir in lemon juice and zest. Cool syrup completely, then strain and discard solids.

Dip phyllo shells into cooled syrup to coat, letting excess drip off; transfer shells to a rack set in a baking sheet.

Combine walnuts and pistachios; stir in 3 Tbsp. syrup until nuts are completely coated. Divide nut mixture among shells; let set 1 hour before serving.
