FOR THE CARAMEL, BOIL:

FOR THE GANACHE, HEAT:

Instructions

Preheat oven to 425°. Line a baking sheet with foil and top with a rack.

For the bacon, thread each strip of bacon onto a skewer; place on prepared rack. Cook bacon 10 minutes, flip, and cook until crisp, 1015 minutes more; transfer to a paper-towel-lined baking sheet.

For the caramel, boil brown sugar, butter, and corn syrup in a saucepan, 1 minute. Whisk in cream and boil 1 minute more. Remove caramel from heat; let cool 10 minutes.

For the ganache, heat cream until it boils; pour over chocolate in a bowl. Let the chocolate sit 5 minutes to soften, then stir until smooth.

Spoon caramel over one side of each bacon skewer; chill until caramel is set. Spoon the ganache over the caramel; letting excess drip back into the bowl. Chill bacon until ganache is set.

For “pockets” where the caramel and ganache can pool, thread the strips onto skewers, accordion-style.

Wait until the caramel is set before topping with ganache so it doesn’t melt and drip off.
