Trimming Kale

Many popular dishes now use peppery greens like collards, turnips, mustard, and chard. But trimming them can be a pain. To get rid of the tough large stem and vein easily: Fold the leaf in half and slice down along the inside edge of the vein. One stroke eliminates both the stem and vein.
