With our new Mexican book in hand; perfect seeding, peeling, cutting, and ripening avocados with these quick tips.

How to Pit and Cut an Avocado

Here’s a way to make preparing avocados easier and a lot less messy.

To seed it, cut around the whole avocado, lengthwise. Take it in both hands, and twist it apart. Then hit the seed with the sharp blade of a large knife. Twist the seed. You should now be able to pull the seed out with the knife still attached.

To remove the peel, take a large metal spoon and run it between the peel and the meat following the contour of the avocado.

To ripen an avocado (it’s easier to peel), place the avocado and a whole apple in a paper bag with a few small holes. Then ripen until soft.
