Just wash them and freeze them in bags — cutting large ones into quarters — until you're ready to use them. The night before making sauce, transfer the bags to the fridge. The next morning, just put the tomatoes on a baking sheet and let them thaw to room temperature — after about an hour, the skins will slip right off!
