Ginger can be difficult to peel — especially the tough, woody parts. Using a peeler or knife can lead to chunks of the ginger coming off. We like to use a tablespoon to remove all that tough skin. Just scrape a spoon down the length of the ginger
— the skin comes right off, and you don’t have any waste.
