Muffin Pan Mini Cheesecakes

One big cheesecake looks impressive, but these other baking options make elegant miniature cheesecakes meant for one.

Muffin pan: Line a 12-cup muffin pan with liners. Press ¼ cup crust mixture into bottoms and up sides of cups; bake at 325° for 10 minutes. Let crusts cool completely. Fill cups with ⅓ cup cheesecake batter; bake 15–20 minutes. Turn oven off with cheesecakes inside, 10 minutes; remove from oven and chill.

 

Mini springform pan: Press 2 Tbsp. crust mixture into bottoms of mini springform cups; bake at 325° for 3–5 minutes. Let crusts cool completely. Fill each cup with 2–3 Tbsp. cheesecake batter; bake 10–15 minutes. Turn oven off with cheesecakes inside, 5 minutes; remove from oven and chill.
