How to Tent Yeast Rolls When Proofing

Sometimes enriched yeast doughs can be sticky, making them tough to cover to rise/proof. Here's a simple trick to create a tent for your rolls and breads to prevent sticking.

Set the brioche dough (or any rising rolls for that matter) on a cookie sheet. Then place a wine glass, upside down, in the middle of the sheet. Drape plastic wrap over the base of the wine glass and tuck and secure on all sides of the cookie sheet. The glass creates a protective tent over the dough and keeps the wrap from sticking to the dough without ruining the top of the rolls and brioche.
