Ideally, you should buy fresh salmon the day you intend to use it. If that’s not an option, storing takes on new importance, since never-frozen fish doesn't keep for very long.

Store it as the fish market does — on ice, but don’t let the flesh touch the cubes. Fill a dish with ice, then form a barrier over the top with plastic wrap. Place fish on top, cover with more plastic wrap, and chill in the coldest part of the fridge up to two days.
