How to Make Citrus Salt

If you have any leftover citrus zest from making meat marinades or salad dressings, or just need the juice—zest the citrus anyway!—and make citrus salt. It can be used in a multitude of ways to add a bright citrus note to recipes.

Mix zest with one part kosher salt. The salt absorbs the oil and “preserves” the zest. Then use this salt to season vegetables and meats. Just sprinkle the citrus salt on steaks or chops before frying or grilling. Lime zest gives a Caribbean flavor to steaks, and orange zest is great with fish.
