To prevent sliced mushrooms from becoming soggy while sautéing, it's important to be sure the pan is properly heated, otherwise the mushrooms will absorb the oil. First, heat the pan, then add the oil, heat it again, then add the sliced mushrooms, being sure not to crowd them.
