Here's a mess-free way to pound chicken breasts or other meats for cutlets or scallopine-no flimsy wax paper or plastic wrap necessary!

A standard zip-lock freezer bag is ideal for pounding out a piece of meat or poultry for scallopini. Regular plastic wrap and wax paper have a tendency to tear if pounded too roughly. The wrap can also get stuck in the meat. By cutting off the “zipper” and then down the two sides of the bag, you get a piece of plastic that folds neatly over the meat. The plastic is heavy enough so that it won’t tear easily. Because of its thickness it can take a good beating.
