Watermelon Salad with Arugula & Cucumbers

When so many potlucks feature rich, hearty foods, it’s good practice to work a healthful green salad into the lineup. Take a summery approach by pairing arugula, which is aromatic and a bit bitter on its own, with juicy, refreshing watermelon. It brings a light, sweet note to each bite.

Complete the salad with cucumber slices, feta cheese, and some balsamic vinegar. There’s really no need to leave bottles of ranch and honey mustard on the table — this salad’s splendid as is.

Sprinkle a pinch of salt on the watermelon before tossing the salad to enhance its sweetness.

Watermelons don’t continue to ripen once picked, so choose one that’s firm and heavy for its size. Also look for a light yellow patch on the underside (where it sat on the ground). A white or pale green patch is a sign the melon is under-ripe.


Sprinkle watermelon with salt and toss with arugula, cucumber, and Peppadews. Drizzle brine, vinegar and olive oil over salad.
