Test Kitchen Tip

If you don’t feel like firing up the grill, bake the sandwich in a preheated 400-degree oven for 15–20 minutes.

Preheat grill to medium-low. Coat one side of a large sheet of heavy-duty foil with nonstick spray.

Spread bottom half of ciabatta with pizza sauce; top with pepperoni and cheese.

Arrange tomatoes on top of cheese; top with remaining ciabatta half. Wrap sandwich in prepared foil.

Grill sandwich, covered, flipping once, until cheese is melted, 15 minutes. Let sandwich cool, then unwrap and halve crosswise.

Using a serrated knife, carefully cut the ciabatta in half, holding it in place while slicing horizontally

An offset spatula is the perfect tool for spreading the sauce over the entire surface area of the ciabatta.

Use Roma tomatoes here — they have a low moisture content and won’t make the sandwich soggy.
