If you can’t find roasted and peeled chestnuts at your local grocery or specialty store, order them online.

Instructions

Preheat oven to 375°. Coat a 9×13-inch baking dish with butter.

Melt 4 Tbsp. butter in a saucepan over medium-high. Add sausage and cook, crushing with a potato masher, until cooked through; transfer to a bowl.

Add remaining 4 Tbsp. butter to pan, reduce heat to medium, then add onions, celery, sage, ginger, nutmeg, white pepper, and cloves. Sweat vegetables, covered, until softened, 15 minutes.

Stir in apple and sweat, covered, 2 minutes more; transfer to bowl with sausage.

Toss in bread, Turkey Stock, chestnuts, and parsley; season with salt and black pepper. Transfer dressing to prepared dish and bake until bread is crisp around the edges, 40 minutes.
