Hot Spinach Salad

Bacon is the key to this warm and scrumptious spinach salad. Not only does it add flavor and texture in its own right, but the drippings provide extra punch for sautéed onions and a honey-Dijon dressing you won't soon forget.

Combine 1 tsp. salt, garlic powder, basil, and paprika.

Heat ⅓ cup oil in a nonstick skillet over medium-high. Add bread; sauté until golden, about 5 minutes, stirring often. Toss croutons with seasonings while still warm.

Cook bacon in a nonstick skillet until crisp; transfer to a paper-towel-lined plate. Drain all but 1 Tbsp. drippings from skillet, then return skillet to medium-high heat.

Sauté onion in drippings until crisp-tender, about 2 minutes. Stir in vinegar, honey, and Dijon; season with salt and pepper. Simmer dressing until slightly reduced, about 1 minute. Off heat, whisk in remaining ⅓ cup oil. Toss spinach, bacon, croutons, and eggs with dressing.
