Golden beets are sweeter, less earthy tasting, and don’t stain like red beets.


Heat oil in a nonstick skillet over medium-high.

Add beets, cover, and cook until slightly soft, 2–3 minutes. Uncover skillet; add potatoes and sauté, stirring occasionally, until golden brown, 9–12 minutes.

Sprinkle home fries with chives; season with salt and pepper.
