Grilled Panzanella Salad

Grilled Panzanella Salad contains a lot of great flavors and textures that make a very nutritious meal or side dish. This Italian salad is a great way to use up stale bread, too.

Ingredients

Bread and tomatoes are the base of this dish, but you can add any of your favorite vegetables to the salad.

Instructions

Preheat grill to medium-high. Brush grill grate with oil.

Whisk oil, vinegar, and Dijon together for the vinaigrette. Season with salt and pepper; set aside.

Toss vegetables, mozzarella, olives, and basil together in a bowl.

Grill baguette, cut side down, until golden, 2–3 minutes, then rub with the cut side of the tomato half. Slice bread into cubes, add to vegetables, and toss with vinaigrette.
