Greek Watermelon Salad
This watermelon salad is delicious and super refreshing. The bright colors are sure to invite your guests straight to the table. Serve this salad at your next summer cookout.
If you can’t find fresh fava beans, substitute frozen and thawed lima beans or edamame.
String fava beans and remove outer shells. Blanch beans 30 seconds to 1 minute, then shock quickly in ice water. Peel off remaining thin shell; dry.
Combine fava beans, watermelon, cucumber, feta, parsley, mint, and zest in a large bowl.
Whisk together lemon juice and oil; season with salt and pepper. Drizzle vinaigrette over bean mixture and toss to coat.
