Fennel-Mint Salad with arugula & apricots

You can store any extra vinaigrette in the sealed jar you shake it up in. Just be sure to keep it refrigerated.
Add oil, lemon juice, honey, mint, garlic, and salt to a jar with a tight-fitting lid; secure lid and shake to combine.
Toss arugula, sliced fennel, fennel fronds, apricots, and pecans in a bowl with desired amount of vinaigrette.
