This Salvadoran pickled cabbage slaw is perfectly tart and tangy, and its flavor keeps building the longer it sits. Curtido is the perfect make-ahead condiment to take Bean & Cheese Pupusas from ordinary to extraordinary.

Toss together cabbage, onion, carrot, jalapeño, oregano, and pepper flakes.

Heat vinegar, sugar, and salt in saucepan over medium for the brine, stirring, until sugar and salt dissolve.

Pour brine over cabbage mixture, tossing to combine; cover and refrigerate overnight, or at least 1 hour. Before serving, drain Curtido and stir in cilantro.
