Herbs, cheese, vinegar, and nuts upgrade plain pearl couscous for a side dish with a little bit of everything.
OFF HEAT, STIR IN:
Sauté shallots and garlic in oil in a saucepan over medium-high heat until shallots begin to soften, 2–3 minutes.
Add couscous and cook 1 minute. Stir in broth and salt; bring to a boil. Reduce heat to medium-low, cover pan, and cook couscous until liquid is absorbed, 9 minutes.
Off heat, stir in cucumber, feta, dill, and vinegar; top with pine nuts.
