For the sauce, boil water and ham for the ham broth in a saucepan until water is reduced to ½ cup, about 15 minutes.

Melt butter in a saucepan over medium heat. Whisk in flour until smooth. Gradually add milk, whisking constantly, and cook until thick. Stir in ham broth, reduce heat to low, and simmer sauce 10 minutes; season with pepper.

For the greens, heat oil in a pot over medium-high. Add onions and garlic; sauté until softened, 3 minutes.

Add collard greens, a handful at a time, tossing until wilted; cook until tender, 1520 minutes. Add mustard greens, a handful at a time, tossing until wilted; cook until tender, 510 minutes.

Transfer greens to a bowl; stir in sauce, season with salt, and serve with Tabasco.
