A northern Italian staple, polenta is simply cornmeal—this one is enhanced with Cheddar cheese.
Refer to package directions for timing. Depending on the variety of cornmeal (quick, instant, etc.), cooking times will vary.
Bring water and milk to a boil in a large saucepan over medium heat. Gradually whisk in cornmeal. Cook cornmeal according to package directions, or until thick, stirring often.
Add Cheddar, stirring until melted. Season polenta with salt. Serve with Shrimp Skewers with Cilantro Pesto.
