Shrimp Skewers with Cilantro Pesto
These shrimp skewers, full of fresh flavor, make for a perfect patio dinner.
FOR THE SHRIMP, COMBINE:
FOR THE PESTO, PURÉE:
Preheat grill to medium-high. Brush grill grate with oil.
For the shrimp, combine ¼ cup oil, garlic, pepper flakes, paprika, lime zest, and salt in a bowl. Add shrimp and toss to coat; marinate for about 5 minutes.
For the pesto, purée cilantro, oil, cream, and lime juice in a food processor. Season with salt.
Thread 4 shrimp onto each of 4 skewers through both the tail and the head to hold in place. Reserve marinade for basting.
Arrange skewers on grill with handles extending over edge. Grill 2 minutes per side, brushing shrimp with marinade as they cook. Serve skewers with pesto and Cheddar Polenta.
To devein shrimp, slice along the back to expose the vein; remove with the tip of a knife.
Thread marinated shrimp onto skewers going through the tail and head to hold them in place.
Arrange skewers on the grill with handles over the edge. Cover and grill 2 minutes per side.
