Make It Ahead

The compote improves over time. To allow the flavors to meld, make it ahead, refrigerate, but use within ten days.

Instructions

Melt butter in a saucepan over medium-low. Stir in pears, brandy, lemon juice, brown sugar, cinnamon, ginger, and salt. Cook, stirring occasionally, until pears are fork-tender, 15–20 minutes. Stir in vanilla bean paste.

Pulse compote using a handheld blender or food processor to desired consistency. Let compote cool, then transfer to a container and refrigerate.
