This Pear-Vanilla Compote makes a sweet accompaniment to a comforting braised brisket dinner. A splash of pear brandy or nectar enhances the overall pear flavor, and vanilla makes it taste like home.

Make It Ahead

The compote improves over time. To allow the flavors to meld, make it ahead, refrigerate, but use within ten days.


Melt butter in a saucepan over medium-low. Stir in pears, brandy, lemon juice, brown sugar, cinnamon, ginger, and salt. Cook, stirring occasionally, until pears are fork-tender, 15–20 minutes. Stir in vanilla bean paste.

Pulse compote using a handheld blender or food processor to desired consistency. Let compote cool, then transfer to a container and refrigerate.


Vanilla bean paste adds visual interest to the pear compote with its black speckles. Pure vanilla extract can be substituted.
