If you’re one of those people who impulsively buys everything a farmers’ market offers, these gazpachos will indulge that guilty pleasure. Stock up on tomatoes, cucumbers, onions, peppers, watermelon (yes way!), and lush aromatic herbs because these soups are too good to pass on.

Instructions

Pureé watermelon, tomatoes, cucumbers, bell peppers, onion, lemon juice, and garlic in a blender.

Add oil, slowly, with blender running, until incorporated. Season gazpacho with salt and black pepper; chill at least 1 hour or up to overnight

Top servings with olives, feta, and cilantro.
