Lunch / Dinner
Packed with fresh herbs and lemon, this recipe for Tuscan Drumsticks is sure to blow you away. Tender, juicy, and oh-so good, it just doesn't get any better when it comes to chicken recipes.
Combine oil, zest, lemon juice, garlic, rosemary, parsley, salt, black pepper, and pepper flakes for the marinade. Reserve 2 Tbsp. marinade, toss drumsticks with remaining marinade to coat, and let stand 30 minutes.
Preheat grill to medium. Brush grill grate with oil.
Remove drumsticks from marinade; reserve marinade for basting. Grill drumsticks, covered, 2 minutes. Flip drumsticks, brush with marinade, and grill 2 minutes. Continue flipping and brushing drumsticks with marinade very 2 minutes until a thermometer inserted into the thickest part, but not touching bone, registers 175°, about 10 minutes more. Transfer drumsticks to a bowl, toss with reserved 2 Tbsp. marinade, and let rest 3–4 minutes before serving.
To really bring out the flavor of the marinade, use it to periodically baste the drumsticks while grilling.
To know when the drumsticks are done cooking, insert a thermometer near but not touching the bone.
Reserve a little of the marinade to toss with the grilled drumsticks for even more flavor.
