Turkey & Broccoli Fettuccine Alfredo
It's the day after Thanksgiving and you’re faced with the usual dilemma — what to do with all of the leftover turkey? No worries. This recipe will turn the remains into something so different you’ll be hard-pressed to call them leftovers at all. If you like fettuccine Alfredo, you’ll love this version made with broccoli and turkey. Who doesn’t love creamy fettuccine Alfredo? While you might not consume this dish on a weekly basis, it’s OK to splurge every once in a while.
Blanch broccoli in a pot of boiling salted water until crisp-tender, 2–3 minutes; transfer to an ice water bath using a slotted spoon to shock, then drain. Add fettuccine to pot and cook according to package directions; drain and wipe out pot.
Melt butter in same pot over medium heat. Add garlic and pepper flakes; cook until fragrant, 1 minute.
Whisk together cream and broth, stir into pot, then bring to a simmer. Cook sauce until it thickens, stirring often, 3–4 minutes.
Stir in turkey, fettuccine, and broccoli; cook until heated through, 2–3 minutes. Stir in Parmesan; season Alfredo with salt.
